Food guide

What is kinako? Roasted soybean flour from Japan

Kinako is soybeans that are roasted and then ground into a fine powder. It tastes nutty and toasty, a little like roasted peanuts, with a gentle natural sweetness.

In Japan, people dust it over mochi and sweets, stir it into milk, and sprinkle it on toast and yogurt. It is already roasted, so you can eat it as it is.

Kinako at a glance

What it is

Whole soybeans, roasted and finely ground.

Taste

Nutty and toasty, like roasted peanuts, and lightly sweet.

Texture

A very fine, soft powder. Stir it into a little liquid first so it doesn’t clump.

Ready to eat

No cooking needed. Sprinkle it on food or mix it into drinks.

How Kouta Shouten makes it

Kouta Shouten is a food maker in Ibaraki, Japan, best known for its hoshiimo (dried sweet potato). For its kinako, it roasts Japanese-grown soybeans slowly and carefully over a direct flame, which gives the powder its deep, toasty aroma.

  • Sprinkle it on oatmeal, cereal, granola, or fruit.
  • Whisk it into warm or cold milk or a smoothie for a nutty drink. Add a little Okinawa brown sugar or honey if you like it sweet.
  • Spread toast with butter, dust it with kinako, and drizzle with honey.
  • Mix it into pancake, cookie, or muffin batter for a toasty flavor.
  • Dust it over mochi, ice cream, or dango (Japanese rice dumplings).

Questions about kinako

Is kinako the same as soy flour?

Both are ground soybeans, but kinako is roasted first, so it tastes nutty and toasty and is ready to eat as it is. Most soy flour sold in the U.S. isn’t roasted and is meant for baking.

Do I need to cook it?

No. Kinako is already roasted, so you can sprinkle it straight onto food or stir it into drinks.

Why does it clump in milk?

The powder is very fine. Stir it into a spoonful of milk to make a paste first, then add the rest, or shake it in a jar or blend it.

What allergens does it contain?

Kinako is made from soybeans. Black sesame & almond kinako also contains sesame and almond. If you have food allergies, check the package label before eating.

How should I store it?

After opening, close the bag tightly and keep it in a cool, dry place away from sunlight. Use it soon after opening for the best aroma.
