What is rice flour (komeko)? Fine Japanese rice flour

Komeko is flour made from white rice. It contains no wheat and no gluten. Kouta Shouten’s rice flour is made from a blend of Japanese and U.S.-grown non-glutinous rice and milled in Japan.

Kouta Shouten mills its rice flour as fine as wheat flour, so you can use it in place of wheat flour in sweets, bread, sauces, tempura, and more.

Rice flour at a glance

What it is

Regular (non-glutinous) white rice, a blend of Japanese and U.S.-grown rice, milled into a fine powder.

No wheat, no gluten

It is made only from rice.

Fine and smooth

It doesn’t clump, so you don’t need to sift it.

Mild taste

It doesn’t get in the way of other flavors.

Not the same as the rice flour you may know

Many rice flours sold in the U.S. are milled more coarsely and can feel slightly gritty in baking.

Mochiko (sweet rice flour) is a different flour: it is made from glutinous (sticky) rice and turns chewy, which is why it is used for mochi. Kouta Shouten’s komeko is made from regular rice, so it bakes and cooks more like wheat flour.

Why Kouta Shouten’s rice flour

As fine as wheat flour

01

As fine as wheat flour

Most rice flour is made by crushing rice between metal rollers. Kouta Shouten uses air-current milling instead: a high-speed whirl of air knocks the grains against each other until they turn into a fine powder. The particles come out as small as wheat flour, mix easily with water, and aren’t scratched or heated in the process, so the rice keeps its flavor.

Lighter, fluffier results

02

Lighter, fluffier results

Because the particles aren’t damaged, they soak up less water while you cook, so sweets and bread turn out light and fluffy rather than heavy, closer to baking with wheat flour. In the photo, the top chiffon cake was made with roller-milled rice flour and the bottom one with Kouta Shouten’s air-milled rice flour; everything else was the same.

Made with care

03

Made with care

It is milled at a skilled partner mill in Niigata, the prefecture that grows the most rice for rice flour in Japan, with traceability and strict quality checks.

How to use it

  • In place of wheat flour in cakes, cookies, pancakes, and other sweets.
  • For bread: with yeast, sugar, and the other usual ingredients, Kouta Shouten’s rice flour can make a soft loaf on its own. (It is plain flour, not a bread mix.)
  • To thicken white sauce, soups, and stews.
  • For tempura and fried foods: it fries up crisp and stays crisp.
  • For okonomiyaki and takoyaki in place of wheat flour. For fluffier okonomiyaki, add a little grated Japanese yam (nagaimo) to bind the batter.
  • Cleanup is easy: rice flour rinses off bowls and tools with water.

Questions about rice flour

Where is it made?

It is made from a blend of Japanese and U.S.-grown rice and milled at a partner mill in Niigata, Japan. Niigata grows the most rice for rice flour in Japan and has a long history of rice crackers and other rice products.

Is it gluten-free?

It is made only from rice, so it contains no wheat and no gluten. People with a rice allergy should not eat it. If you have celiac disease or a wheat allergy, check the package label.

How is it different from wheat flour?

Wheat flour contains gluten, the protein that makes bread dough stretchy and elastic. Rice contains no gluten, so the same recipe comes out differently: bread made with wheat flour is airy, while bread made with rice flour is softer and slightly chewy.

Can I bake bread with only rice flour?

Yes. Kouta Shouten’s rice flour can make a soft loaf on its own. It is plain flour, not a mix, so add yeast, sugar, and the other ingredients your recipe calls for.

Can I use it for pancakes, okonomiyaki, or takoyaki?

Yes, in place of wheat flour. Rice flour is less sticky than wheat flour, so add a little grated yam to okonomiyaki batter for a fluffier result. Takoyaki turns out crisp outside and soft inside without it.
