How to make homemade natto

Ingredients

  • Store-bought natto, 1/4 pack
  • Boiled beans (soybeans, black soybeans, or similar), 300 g (about 10.5 oz)

Method

Pour a little water into the glass pot, stand the yogurt spoon in it, and put on the inner lid.
Microwave until the water boils (about 1 minute 30 seconds at 500–600 W). After sterilizing, don't wipe the pot with a towel. Just shake off the water and use it as is.

Put the boiled soybeans and the natto in the sterilized glass pot and mix well.

Leave the inner lid off and close the handle lid. Set the glass pot in YOGURTiA and put on the main lid.

Set the temperature to 45°C (113°F) and the timer to 24–48 hours, then press the start button. (The longer it runs, the further it ferments.)

When it's done, move it to the refrigerator. Let it rest there for 1–2 days so fermentation reaches the center of the beans and the flavor settles.


Tips

  • It keeps for about 1 week in the refrigerator.
  • Use a glass pot reserved just for natto.
  • You'll smell the natto while it ferments. If that bothers you, ventilate the room or drape a thin cloth, such as a gauze handkerchief, over the machine.

材料

  • 納豆(市販)1/4パック
  • 豆(大豆、黒豆等、水煮)300g(約10.5 oz)

作り方

ガラス容器に少量の水を入れ、ヨーグルトスプーンを立て、内ふたをはめます。
そのまま電子レンジに入れ、水が沸騰するまで加熱します(500〜600Wで1分30秒が目安)。消毒後はふきんなどで拭かず、水滴を軽く切って、そのまま使用してください。

消毒した内容器に、水煮大豆と納豆を入れ、よく混ぜます。

ガラス容器に内ふたをせずに取手ふたを閉め、本体にセットして、外ふたをのせます。

温度を 45℃(113℉)、タイマーを 24〜48時間 にセットして、スタートボタンを押します。(時間が長いほど発酵が進みます。)

出来上がったら冷蔵庫で保存します。冷蔵庫で 1〜2日 寝かせると豆の中まで発酵が進み、味がこなれておいしくなります。


調理のポイント

  • 賞味期限の目安は冷蔵庫で1週間程度です。
  • 納豆を作る際は、内容器を納豆専用のものにしてください。
  • 発酵中は、納豆特有の匂いがします。気になる方は、お部屋の換気をよくしたり、本体の上にガーゼハンカチなどの薄い布を被せたりしてください。
