How to make additive-free homemade yogurt

Here's how to make yogurt with nothing added, using the TANICA YOGURTiA fermented food maker. Mix the ingredients, set the temperature to 40°C (104°F) and the timer to 7 hours, and press the start button.

Ingredients (for 1,100 ml / about 4⅔ cups)

  • Milk, 1 carton (1 L / about 1 qt / about 4¼ cups)
  • Plain yogurt, 100 g (about 3.5 oz)

Method

Pour a little water into the glass pot, stand the yogurt spoon in it, and put on the inner lid. Microwave until the water boils (about 1 minute 30 seconds at 500–600 W). After sterilizing, don't wipe the pot with a towel. Just shake off the water and use it as is.

Pour 100–200 ml of milk (about ½ to scant 1 cup) into the sterilized glass pot. Use fresh, unopened milk.

Add the yogurt (your starter), about 10% of the total milk, and stir well until it dissolves. If the starter isn't fully mixed in, the yogurt can turn out lumpy.

Add the rest of the milk and stir gently until evenly mixed, without whipping in air.

Put the inner lid on the glass pot, close the handle lid firmly, and set the pot in YOGURTiA. Set the temperature to 40°C (104°F) and the timer to 7 hours, then press the start button.

When fermentation is done, chill the yogurt well in the refrigerator. Keep it refrigerated and eat it within about 1 week.


Tips

  • If the yogurt seems too soft, ferment it for another 1–2 hours.
  • To use this batch as the starter for your next one, transfer the freshly made yogurt to a sterilized airtight container and keep it in the refrigerator.

材料(1,100ml(約⅓カップ)分)

  • 牛乳 1本(1L(約1 qt / 約4¼カップ))
  • ヨーグルト 1カップ(100g / 約3.5 oz)

作り方

容器に少量の水を入れ、ヨーグルトスプーンを立て、内ふたをはめます。そのまま電子レンジに入れ、水が沸騰するまで加熱します(500〜600Wで1分30秒が目安)。消毒後はふきんなどで拭かず、水滴を軽く切って、そのまま使用してください。

消毒した内容器に牛乳 100〜200ml(約⅓カップ〜約¾カップ) を入れます。※牛乳は未開封の新鮮なものをご使用ください。

牛乳全体の約1割のヨーグルト(種菌)を入れ、よく混ぜて種菌を溶かしてください。※種菌が十分に混ざっていないとヨーグルトにダマができることがあります。

よく混ざったら残りの牛乳を入れて、泡立てず均一になるように混ぜます。

内容器に内ふたをはめ、取手ふたをしっかりしめ、本体にセットします。温度を 40℃(104℉)、タイマーを 7時間 にセットしスタートボタンを押します。

発酵終了後、冷蔵庫でよく冷やします。できあがったヨーグルトは冷蔵庫で保存し、賞味期限は 1週間 を目安にしてください。


調理のポイント

  • 固まりが弱いと感じた場合は、1〜2時間ほど発酵を延長してください。
  • できあがったヨーグルトを次に作るヨーグルトの種菌として使うには、消毒した密閉容器にできたてのヨーグルトを移し、冷蔵庫で保存します。
