Miso is one of Japan’s traditional fermented seasonings. Its flavor weaves together saltiness, sweetness, astringency, and umami.
Miso soup, ozoni, and hot pots all draw on that rich flavor and on the soybeans the miso is made from.
Miso is also useful for prepping ingredients. Saikyo-zuke, fish or meat marinated in white miso, is a classic example: the meat turns tender, the fish stays moist, and you get the mild, lightly salted sweetness of Kyoto-style white miso.
