How to make homemade shoyu koji (soy sauce koji)

Ingredients

  • Dried rice koji, 200 g (about 7 oz)
  • Soy sauce, 200 ml (about ¾ cup)
  • Water, 100 ml (about ⅓ cup)

Method

Pour a little water into the glass pot, stand the yogurt spoon in it, and put on the inner lid.
Microwave until the water boils (about 1 minute 30 seconds at 500–600 W). After sterilizing, don't wipe the pot with a towel. Just shake off the water and use it as is.

Rub the rice koji between your palms until the grains separate.

Put the loosened rice koji, water, and soy sauce in the sterilized glass pot and stir well.

Put the inner lid on the glass pot, close the handle lid firmly, set the pot in YOGURTiA, and put on the main lid.
Set the temperature to 60°C (140°F) and the timer to 6 hours, then press the start button.

It's ready when you can crush a grain of rice koji between your fingers.
Give the whole batch a good stir, then store it in the refrigerator.


A deeper flavor with shoyu koji

Shoyu koji is a seasoning made by adding soy sauce to rice koji and letting it ferment and mature.

Soy sauce is a fermented seasoning that balances umami, saltiness, sweetness, acidity, and bitterness. Because the rice koji ferments in it, shoyu koji is said to contain 10 to 15 times as much glutamic acid as shio koji (salt koji).

Like shio koji, shoyu koji tenderizes ingredients, tames off-flavors, brings out umami and sweetness, and helps food keep.

It's a natural fit for Japanese cooking, and it works in Western and Chinese dishes too. Spoon it on in place of soy sauce over fried eggs, fish, steak, roast chicken, and other meat dishes.

材料

  • 米麹(乾燥)200g(約7 oz)
  • しょうゆ 200ml(約¾カップ)
  • 水 100ml(約⅓カップ)

作り方

ガラス容器に少量の水を入れ、ヨーグルトスプーンを立て、内ふたをはめます。
そのまま電子レンジに入れ、水が沸騰するまで加熱します(500〜600Wで1分30秒が目安)。消毒後はふきんなどで拭かず、水滴を軽く切って、そのまま使用してください。

米麹は両手でこすり合わせるようにして、一粒ずつほぐします。

消毒した容器に、ほぐした米麹と水、しょうゆを入れ、よくかき混ぜます。

ガラス容器に内ふたをはめ、取手ふたをしっかり閉めた後、本体に入れて外ふたをします。
温度を 60℃(140℉)、タイマーを 6時間 にセットして、スタートボタンを押します。

指で米麹がつぶれるくらいになったらできあがりです。
一度全体をよくかき混ぜて、冷蔵庫で保存します。


しょうゆ麹で楽しむ深い味わい

しょうゆ麹は、米麹にしょうゆを加えて発酵・熟成させた調味料です。

しょうゆは、うまみ、塩味、甘み、酸味、苦みをバランスよく含む発酵調味料。そこに米由来の麹を合わせて発酵するため、しょうゆ麹のグルタミン酸含有量は、塩麹の10〜15倍といわれます。

塩麹と同様に、しょうゆ麹も、麹の働きによって食材をやわらかく、食材のくさみを消してうまみや甘みを引き出し、保存性を高める作用があります。

使い勝手は抜群で、和食にはもちろん、洋風にも中華風にも手軽に使えます。しょうゆの代わりにそのまま目玉焼きや魚料理やステーキやローストチキンなどのお肉料理にかけても、おいしくいただけます。
