Here's how to make amazake with nothing added, using the TANICA YOGURTiA fermented food maker and rice koji. Mix the ingredients, set the temperature to 60°C (140°F) and the timer to 6 hours, and press the start button. Give it a try.

Pour a little water into the glass pot, stand the yogurt spoon in it, and put on the inner lid.
Microwave until the water boils (about 1 minute 30 seconds at 500–600 W). After sterilizing, don't wipe the pot with a towel. Just shake off the water and use it as is.

Rub the rice koji between your palms until the grains separate.

Put the rice and water in the sterilized glass pot and mix well.

Add the loosened rice koji and mix again.

Put the inner lid on the glass pot, close the handle lid firmly, set the pot in YOGURTiA, and put on the main lid.
Set the temperature to 60°C (140°F) and the timer to 6 hours, then press the start button.

It's ready when it tastes sweet.
Some amazake is made by dissolving sake lees, but this one is made with rice koji. It contains no alcohol, and the sweetness is light and natural.
Drink it as is, or cook with it in place of sugar or mirin.
The enzymes in rice koji are still at work in the amazake. They break down protein and starch, tenderizing ingredients and drawing out umami and sweetness.
It's also rich in B vitamins, oligosaccharides, essential amino acids, and glucose.

ガラス容器に少量の水を入れ、ヨーグルトスプーンを立て、内ふたをはめます。
そのまま電子レンジに入れ、水が沸騰するまで加熱します(500〜600Wで1分30秒が目安)。消毒後はふきんなどで拭かず、水滴を軽く切って、そのまま使用してください。

米麹は両手でこすり合わせるようにして、一粒ずつほぐします。

消毒した内容器にご飯と水を入れ、しっかり混ぜます。

ここにほぐした米麹を入れてさらに混ぜます。

ガラス容器に内ふたをはめ、取手ふたをしっかり閉めた後、本体に入れて外ふたをします。
温度を 60℃(140℉)、タイマーを 6時間 にセットして、スタートボタンを押します。

甘みが出ていればできあがりです。
甘酒には、酒粕を溶いて作るタイプもありますが、ここで作るのは米麹で作る甘酒。アルコール分を含まず、とても自然でサラリとした甘みがあります。
