You wake up and your body feels heavy. Your concentration gives out in the afternoon. By the weekend you’re too tired to feel like doing anything. In 2006, the Brewing Society of Japan designated koji mold as Japan’s “national mold” (kokkin). Just as the cherry blossom is the national flower, koji mold is the national mold. Miso, soy sauce, mirin, sake, amazake, pickles: much of the Japanese food we eat without a second thought could not exist without the power of koji. In other words, koji lies at the root of our food culture, and it is an irreplaceable presence that has supported our health. A familiar companion that has always been right there by the table — that’s koji.

In particular, the three digestive enzymes koji produces — amylase, protease, and lipase — break down carbohydrates, protein, and fat, respectively. So when you bring koji into your diet, digestion goes more smoothly, nutrients are properly absorbed, and your gut comes into balance. And when the gut is healthy, nutrients reach the whole body, and you begin to notice changes like “My body has felt lighter lately” or “I’m waking up better in the morning.”

On top of that, koji is rich in B vitamins: vitamin B1, B2, B6, niacin, pantothenic acid, folate. These are essential for energy metabolism and for maintaining nerve function. Vitamin B1 in particular is sometimes called the “fatigue-recovery vitamin.” The oligosaccharides in koji also feed good bacteria and help balance the gut flora. And because the gut and the brain are linked through the gut-brain connection, a balanced gut can bring changes to your skin and mood as well.
