Amazake troubleshooting

1. I made amazake, but it isn't sweet. Why?

First, check whether the temperature ran too high. Often it has crept up to nearly 70°C (158°F) without your noticing. That happens a lot in a rice cooker, so aim to hold it around 60°C (140°F). If it stays too low, around 40–50°C (104–122°F), the enzymes aren't very active, and it won't sweeten either.

Old koji is another possibility. Use fresh koji soon after you buy it, or freeze it. Dried koji loses enzyme activity as it ages too. And once in a while the koji itself is poor quality, and the enzymes never get going.

Fermenting it for too short a time can also be the cause. Amazake made from koji alone should taste sweet in about 4 hours. If it isn't sweet enough, give it another 1–2 hours. The right time varies a little with the koji, so taste and adjust.

2. My amazake turned sour after a while. Can I still drink it?

Amazake can turn sour even in the refrigerator. One explanation is that lactic acid bacteria, or similar microbes that feed on glucose, got in and multiplied. In the past, home cooks sometimes treated that sourness as pleasant and drinkable. But the sour taste doesn't always come from lactic acid bacteria. Spoilage microbes that also feed on glucose can get in and produce acid. If your amazake tastes sour after it has sat, the safer choice is not to drink it.

Keep your refrigerator clean so those microbes stay out, and don't stir fresh amazake with a dirty spoon or your fingers. Amazake is rich food for people, and for spoilage microbes too. Finish it within about a week. Freeze it if you need to keep it longer.

3. What happens if I overheat fresh amazake?

Overheating it amounts to pasteurizing it. The enzymes stop working, the microbes die, and vitamins break down. The flavor barely changes, though, and not every nutrient is lost. You can still drink it, and you can still cook with it in place of sugar.

If you want your amazake with the enzymes still active and the vitamins still there, the rule for warming it is to stay at or below 60°C (140°F). Gently warm is enough. Boiling also dulls the flavor of fresh amazake, so don't thin it with boiling water either.

Cold doesn't inactivate the enzymes, so ice and the freezer are fine. Piping hot is the problem; chilled is not.

4. What happens if I keep it warm too long?

While it sits warm and ferments, other microbes, including lactic acid bacteria, can get in. The longer it stays warm, the more time those microbes have to grow, and the taste can turn sour, a little like yogurt. A similar sourness shows up when the holding temperature was too low, or when the koji was old to begin with.

Once fresh amazake has turned sour, there's no way to tell which microbes grew in it. The usual advice is not to use it.

YOGURTiA, or a similar machine with a timer, keeps to the time you set, and a closed pot gives stray microbes fewer chances to get in. That makes a failed batch less likely.

#14 — 生甘酒相談室(甘酒)

生甘酒相談室

1 甘酒をつくりましたが、甘くなりません……

まず考えられる原因は、温度が高すぎたこと。知らないうちに70℃近くになっていた、というパターンです。特に炊飯器でつくる場合に起こりがちなので、60℃前後を保つよう注意してください。40〜50℃と低すぎる場合も、酵素の活性が低いため、甘くなりません。

麹が古かったということも考えられます。生麹を購入したら、なるべく早く使いきるか冷凍を。乾燥麹でも、古くなると酵素の活性は衰えます。まれに麹の質が悪くて、酵素が活性しないこともあります。

発酵時間が短いのもNGです。麹だけでつくる生甘酒の場合は、4時間もあれば甘くなるはずですが、甘みが足りないならば1〜2時間延長を。麹によっても適正時間は多少変わるので、味見をしながら時間調整してください。

2 時間がたって酸っぱくなりましたが飲めますか?

冷蔵保存していても、酸っぱくなることがあります。これはブドウ糖をエサにする乳酸菌などが入り込み、増えたことが原因として考えられます。昔の人はこれを、酸味があっておいしいといって飲んでいたようですが、酸っぱい原因が乳酸菌によるものとは限りません。ブドウ糖をエサにする雑菌や腐敗菌が混入し、酸を出すこともあるのです。このため時間がたって酸っぱさを感じたら、飲まないほうが無難です。

雑菌や腐敗菌を入れないためにも、冷蔵庫内は清潔に。生甘酒を汚れたスプーンや指でまぜるのもNGです。人にとっても栄養豊富な生甘酒は、雑菌や腐敗菌にとっても栄養たっぷりのエサになるので、1週間以内を目安に使いきりましょう。それ以上保存する場合は冷凍しましょう。

3 生甘酒を高温で加熱してしまったらどうなりますか?

火入れしたのと同じことになりますので、酵素は失活し、微生物も死滅し、ビタミンも壊れます。けれどもおいしさはほとんど変わりませんし、栄養がすべてなくなってしまうわけではありません。飲んでももちろんOKですし、砂糖のかわりに料理に使ってもいいでしょう。

酵素が活性し、ビタミンが生成していない生甘酒ならではの効用を得たいなら、温めて飲みたいときも、60℃以下にしておくのが鉄則。ほんのり温かい程度に留めておきましょう。グラグラと沸騰させると、せっかくの生ならではの風味も損なわれます。熱湯で割って飲むのもNGです。

逆に、冷やすことによって酵素は失活しないので、氷を入れたり冷凍するのは大丈夫です。アツアツはNG、ヒンヤリはOKです。

4 ついうっかり長時間、保温したらどうなりますか?

保温して発酵させている過程で、乳酸菌などの他の微生物が混入することがあります。保温の時間が長くなればなるほど、乳酸菌などの増える可能性が高まるため、ヨーグルトのような酸っぱい味になることも。同じような酸味は保温の温度が低すぎるときや、もともとの麹自体が古かった場合にも出てしまいます。

酸っぱくなってしまった生甘酒は、どんな微生物が繁殖したのかを目で見て確かめることができないため、基本的には使用はおすすめできません。

YOGURTiA やヨーグルトメーカーを使うと、保温時間設定ができますし、雑菌の混入の可能性も少ないため、失敗することがほとんどありません。
